Scenario

With 2 GW1000s, is it possible to set  one to read one external source , and the other a different one?

I'm not concerned with internal readings which the GW1000 will use its own no matter what. Just the external

The external sensors could be rain, wind , whatever.

It's possible. It's why some people have two of them, for instance to read the ultrasonic wind sensor on one & the wind cup sensor on the other one to compare.

Is this a way around the sensor limit in the GW1000? E.g. can i have 8WH51 one GW1000 and four WH51 on a second one? Or am i just being greedy?

It could be a way around it but there are challenges
The issue you have is that there is no easy way to force the sending sensors to be picked up by one or the other GW1000 if you have more than 8.
You would have to power off the one set of sensors and power on the first GW1000. Once all have registered with the first GW1000 you are free to power it down and those sensors and repeat the setup with the next set.
After that you should be able to power everything back up...however its not cast iron that they will stick but that should work.
I am not sure if anyone on the board has tried this yet, but as you can see it would be a bit of a faff!
