The purpose is to get different data from a 2nd station console (up to 5 I believe). If both consoles are receiving the same data and they are thr same model then there isn't much point other than redundancy. Typically the purpose is for those that have for example an Ecowitt console and a Davis and they want to use the Meteobridge for both console data.

Another purpose might be that you want to have more than 8 WH31 sensors. Then the first GW1000 gets the first 8 and then the additional are received by the 2nd. Then the Meteobridge combines all the data.

If you have e.g. two GW1000 and have an outdoor WH65 array but also a WS68 and a WH40, you can configure your GW1000 such that e.g. GW1000 (1) receives the rain data from the WH65 and GW1000 (2) from the WH40,
same with wind: WH65 or WS68, or with more than 8 WH31 (see before @galfert) or more than 8 WH51, or 2 sets of WH51 in different places which you want to see reported differently.
What you now can see with different devices at ecowitt.net you can also have as different stations in Meteobridge which will then reflect different (usually excluding) combinations of your outdoor sensors.
In the MB  when posting to web sites, templates etc. or when creating reports/graphs you can combine these different sensors into one (or more) consolidated view(s).
