I hadn't heard of IPTimelapse. Is there a Linux version? All my stuff runs on assorted Linux machines (physical and virtual). I suppose I could bring up a windows VM if I had to; I'll look into it. I'd much rather source it locally and pay a one-time fee. The only thing I didn't like about IPcam, is the cost.

I believe it's Windows only.

Really, IPTimelapse is a GUI front end to FFMpeg.  It would take a lot of trial and error, but I'm sure there is a Linux solution out there.  I know some people smarter than I am, are using FFMpeg on Raspberry PI boxes.  So I'm sure it can be done.  Just depends on how good you are at Linux.  Me, I can spell Linux....

I am certainly no Guru, but if I can search Google and someone has troubleshoot it, I probably, kinda, might be able to duplicate it. That being said, I certainly can't create something from scratch and I am not a programmer, so there is that.
