I am thinking of getting the Ecowitt WH5360 as Amazon have it on sale at the moment

I am wondering how accurate it is and will it work with my GW2000 base unit

Yes

It is a WH40 with a almost useless console (I have it) , but you will be able to read the WH40 from a  GW1000/1100/2000, and some other consoles .

The console you are purchasing, reports the rain, and internal temp and humidity (strange combination), and nothing else. The firmware on the console cannot be upgraded, it is is single purpose. But if this is your way to get a WH40, as it was for me and the price differential is small enough, not bad.

Make sure the frequency is correct for your use. I can see why there might be a deal in $s for these, as the console is really a useless item for most people.

the GW2000 can connect to all Ecowitt sensors (except the WH32B) - have a look at https://www.wxforum.net/index.php?topic=40730.0 
Also with the WH40 which is the rain gauge which comes with a HP2552/GW1x02 HP2553/GW1x03 stations.
It can be added to the WS90 and the WSView Plus app and the WebUI of the GW1x00/GW2000 will show a synoptical view of both side by side.
Also, for both "rainfall" and "piezo rainfall", the WS90 measured rain, you will get a tile in the ecowitt.net dashboard.

If you aim is to compare rain totals, just get a WH40 the GW1000/1100/2000 will read it as a 2nd rain sensor.
So if you already have a Wittboy ( WS90, and the GW2000), you can see the values from both the WS90 and the WH40 (rain)  in the WSView + app, as well as Ecowitt.net, without having to purchase another console.

You should also get a reputable manual rain sensor. One of those things you compare values with, ascertain a comfort level with your readings from other devices, then have to dump out.
