My parents want to watch "The Simpsons" tonight and I wanted to record the CMA Music Festival. Will it still record though we're not watching it? I'll be super sad if I miss it...

Without knowing your setup hard to tell.
If you are using windows as your tv tuner, then no.  If you have one coax going to the pc, and one going to tv, then yes, you can dvr on the windows pc, and watch something completely different on the tv.

Well I just missed the entire concert then LOL. Great.  Rolling Eyes d'oh!
