Bolt it to the shed using 4 bolts with washers and get a pole of some kind 6ft long and fix the wind sensor to that

If you have a Radio Shack store or another home T.V. antenna type of store around, you might be better off using something to hold that mast like this. You might have to add a piece of wood along for the bottom mount but it would be a lot more rigid in high winds.

I don't mean to be silly but what is that called, we dont have many stores like radio shack around here so online is my only real option.

By default the cables are about 10-15 feet long. You can separate them how you like, if you need more distance you can buy a coupler and more cable (which is what I did with my anemometer.

Something like this

I doesn't appear in your pics that there is much distance from the peak of the shed roof down to the top of the door. This might not be much area for support depending on how high your mast is going to be. If you use a long mast you might be able to just bolt it along the side like this. Common lag bolts, washers, and a steel strap (or 'clips' as Mackbig suggested above). Build out the bottom from the shed with a block of wood and bolt to that.
Chain link fence top rail makes a good mast pole.

I was planning on using a 6ft pole, the distance from the top of the door to the top of the roof is around 1ft so the total distance of the pole in the air would be 5ft.

I was going to use an offset bracket as the roof overhangs the actual walls of the shed so if i bolted the pole directly onto the shed wall it may snag on the roof, i was then going to add some wood to the back of the bracket to add some extra support.

Okay, post some pics for us when you got it all setup, will ya? Good luck and here's some info that may help with locating the temp/hygro and rain sensors (within cable reach of the wind sensor).   http://newa.cornell.edu/index.php?page=placement-guidelines

My station arrived yesterday, looking forward to setting it up over the weekend.

Bought a 6ft Aerial pole with some steel hose clips so i can attach it to the washing line pole, i just hope that it will reach my weather station computer upstairs.

Keeping a log of my construction so will let you know how i  get on.

From your photo's it looks to be around 50' max. from that clothes line pole to your house? If so and you don't have aluminum siding on the house there should be no problem with signal strength I would guess.
Have fun with the installation.
